The BAMiSA porridge is a "liquefied concentrated porridge" (LCP) made with BAMiSA flour. The ingredients of this flour are Cereal (pearl millet or maize), two fatty Legumes (soy and peanuts), Sugar and iodized Salt. So it is a compound porridge of high protein-energy value and low viscosity.

Its preparation is specific: “A lot of flour for a little water”. Indeed, after a quick boil, it becomes very thick. While it is still warm, a local amylase like malt is then added to liquefy it.

 

The «1+2+3» formula sums up its preparation mode :
1 stands for one volume of flour, 2 stands for two volumes of water
and 3 stands for three pinches of malt.

The large quantity of flour compared to the small amount of water enables the BAMiSA LCP to reach a concentration of 30% dry matter which is three to four times more than traditional porridges.

The starch degradation due to the introduction of amylases enables to get rid of the dietary bulk effect of traditional porridges. Liquefaction enables quick and complete consumption of LCPs as well as their easy digestion. This liquefaction process avoids the disastrous dilution of thick porridges with water.

The Nutritional Value of BAMiSA porridge

A bowl of BAMiSA porridge is made from 200 ml water and 60 g flour. Its caloric value is about 250 kcal. Two BAMiSA porridges provide 500 Kcal, equivalent to one sachet of RUTF.

Users of BAMiSA porridge

Young children

  • Children over the age of six months, one LCP BAMiSA porridge given as a supplement to breast-feeding, contributes to prevent malnutrition.
  • As early as four months old, in case of irreversible deficit of maternal milk and also for orphaned children, one LCP BAMiSA porridge a day can be given in complementation of a milk diet.
  • BAMiSA porridge is to be used until the child is able to have its nutritional needs satisfied by the traditional family food.

Malnourished children

  • Children at risk of malnutrition or suffering from moderate malnutrition, or undergoing phase 1 of a severe acute malnutrition treatment need two or three LCP BAMiSA porridges to be added to their usual food. A mineral-vitamin complementation must be associated.

Older children and adults

  • One porridge a day may be beneficial to school-aged children, pregnant or breast-feeding women and older people.
  • Plan 2 to 3 porridges for sick or malnourished adults (chronic illnesses, HIV positivity, surgery,).

If the consumer prefers a thick porridge, don′t add the malt.

BAMiSA flour can be “enriched” with fruit juice, moringa oleifera leaves, red palm oil, or “fortified” by adding micronutrients. 

The BAMiSA Porridge Recipe

The BAMiSA porridge is a Liquefied Concentrated Porridge. It follows three principles :

  1. The Control of the water/flour proportions :
    Mix « 1 volume of flour for 2 volumes of water », that is to say « 60 g of flour and 200 ml of water » for one bowl of porridge
  2. A brief cooking
    The cereal and the fatty legumes have been precooked by their preliminary roasting. Thus, cooking for one to two minutes until the porridge becomes thick is sufficient.
  3. The amylasic liquefaction of the porridge
    Natural amylase, malt or sweet potatoes, mixed gradually into the hot porridge, leads to its liquefaction. The mother can replace the three pinches of malt by a small quantity of her milk or she can wet the spoon with her saliva before putting it the porridge. Breast milk and saliva are rich in amylases.

Preparation of a LIQUEFIED CONCENTRATED PORRIDGE
without BAMiSA Flour

It is possible using local ingredients,
and following the formula “1 + 2 + 3”.

The ingredients required are the same as in BAMiSA compound flour:

  • Cereal, millet, sorghum, corn or rice flour.
    If possible, toast the cereals before grinding or gently toast the flour.
  • Roasted soy flour. Toasting the soybeans before grinding is indispensable.
  • Peanut paste,
  • Iodized salt,
  • Sugar.

The quantities of ingredients and water required are count in mesures.
            The proportions             « 1 volume of BAMiSA flour for 2 volumes of water »,
            become                         « 9 ingredient measures” for “18 water measures ».

The size of the container used as a measure will be adapted to the amount of porridge desired.

And to liquefy,

  • Prepare a little natural amylase: flour from a germinated cereal (malt), or raw mashed sweet potato. When the mother prepares this porridge for her own child, a little of her milk or saliva on the spoon also allows liquefaction.

Preparation of Liquefied Concentrated Porridge (LCP)
directly with local ingredients

  1. In a pot or a large bol
    Pour                  9 measures of cold water,
    Then add           6 measures of cereal flour, toasted if possible
                            2 measures of toasted soy flour
                            1 measure of peanut paste
    Then mix.
  2. In an other pot,
    Heat                  9 measures of water,
  3. Pour the mixture into boiling water
  4. Add a pinch of iodized salt
  5. Boil for a few minutes while stirring continuously,
          If the cereal has not been roasted,cook the porridge a little longer.
          The porridge becomes thick
  6. Do not add water, but
  7. 7° Liquefy the thick porridge by adding a natural amylase
  8. Add sugar to the liquid porridge, as you like
  9. If possible, enrich the porridge with vitamins A and C by adding a little dried Moringa leaf powder, a spoon of red palm oil, a little fruit juice, tomato, spirulina.. or another food known for its vitamin and mineral richness..
